Phil Vickery recalls watching the Queen's lunch being prepared

Celebrity chef Phil Vickery shared his stories about being behind the scenes at Buckingham Palace on Wednesday’s instalment of This Morning. He opened up to hosts Phillip Schofield and Holly Willoughby about witnessing a top chef preparing a simple lunch for the Queen in a “meticulous way”.
He explained to ITV viewers: “So we were filming in a beautiful kitchen, a pristine kitchen, and then a footman came down.
“He whispered something to the head chef so we had to stop filming for a few seconds and then off he went.
“Then suddenly the chef produced this beautiful loaf of bread which was absolutely perfect, smoked salmon, which is so thinly cut you could read a newspaper through it, and he proceeded to make some sandwiches.
“What I noticed was he made them in two layers, and every finger that was cut, even the corner of the finger was cut off meticulously with a very small knife.
“They were stacked up and I believe the Queen had come back from opening Crossrail at the time and had popped back for a bit of lunch and I am sure that was for her.
“At the time we could not film it and I thought, ‘That’s got to be for her.'”
Holly said it must have been a very special moment for him to witness.
Co-host Phillip added: “I suspect the fact we were not allowed to talk about it points to the fact that it was [for the Queen].”
“Let’s assume,” chef Phil concluded in response to Phillip.
Elsewhere in the instalment, Phil baked a ginger cake, which was supposedly a favourite of Her Majesty.
Details of the Queen’s favourite foods have been detailed in the past by Darren McGrady who was Her Majesty’s personal chef for more than 15 years.
He also worked for other members of the Royal Family including Princess Diana, Prince Harry and Prince William at Kensington Palace.
In his book, Eating Royally: Recipes and Remembrances from a Palace Kitchen, it said the Queen ate four meals a day, although they were four small portions.
He has said afternoon tea, which is composed of sandwiches and scones, was one of the Queen’s favourite things to eat.
He said: “She’d always have afternoon tea wherever she was in the world. We’d flown out to Australia and were on the Royal Yacht.
“It was five o’clock in the morning but for the Queen, it was five in the afternoon so my first job was making scones.”
Darren said in a YouTube video the Queen had a penchant for Morecambe Bay potted shrimp on toast.
He said: “They’re cooked and marinated in this secret spicy butter and then the Queen would have them with warm toast, and when you spread them on the warm toast, the butter melts.”
The Queen caught the attention of thousands of viewers when she appeared in a heartwarming skit alongside Paddington Bear for her Jubilee celebrations.
She presented a marmalade sandwich from her handbag, saying she “always kept one in there, for later”.
