Home cooks gushed about a way to make roast chicken skin extra crispy.
It requires very little effort – and you’ll only need a few sprinklings of baking soda to do it.
A Redditor wrote: “(Try) baking powder on your chicken skin to get it extra crispy.”
The suggestion was upvoted 234 times – and many agreed that it’s an easy way to take your roast dinner to the next level.
So here’s how to try the chicken trick when you’re next whipping up Sunday lunch.
How to do it
- Mix one teaspoon of baking powder with three teaspoons of salt
- Crack some black pepper in and combine the ingredients
- Pat over the skin of your chicken evenly
- Leave it in your fridge for a few hours – or overnight if you can
- Roast as you usually would
Why the cooking hack works
As baking powder is alkaline, it alters the chicken skin's pH and helps it to break proteins down more easily.
It also creates a carbon dioxide reaction that causes layers of the bird’s skin to bubble up.
Both these factors make for poultry that's a lot crispier.
Redditors pointed out that baking soda can be used on other meats too.
One commenter remarked: “This would work for crispy pork belly/shoulder as well.”
Another said: “Chinese cooking does this to beef. They call it velveting I believe.”
And a third added: “This is what I do for wings in the air fryer. Makes them nice and crispy without the mess of using oil.”
